Samarkand to host global food festival celebrating Uzbekistan’s iconic rice dish
Chefs and tourists from around world to gather in Uzbekistan for inaugural Pilaf Festival, featuring 7 tons of Samarkand-style rice
TASHKENT, Uzbekistan (MNTV) — The ancient Silk Road city of Samarkand will host Uzbekistan’s first-ever Pilaf Festival from August 1 to 3, bringing together chefs, tourists, and food lovers from around the world to celebrate the country’s rich culinary heritage.
According to UZ Daily, the “Samarkand Pilaf” Festival will feature over 200 chefs competing in an international cooking contest, along with live cooking masterclasses, exhibitions of sweets and handicrafts, and performances by leading Uzbek musicians. A highlight of the event will be the preparation of seven tons of Samarkand-style pilaf at the Boqiy Shahar complex.
Pilaf—known locally as plov—is a beloved rice dish made with carrots, onions, meat (usually lamb or beef), and a rich blend of spices. It is more than just a national dish; in Uzbekistan, it is a symbol of hospitality and often served at weddings, celebrations, and community gatherings.
Each region has its own variation, and Samarkand’s version is famed for its unique method of slow-cooking and layered flavors.
Organizers say the festival marks a significant step in promoting gastronomic tourism and aims to position Uzbekistan as a cultural and culinary destination. For many visitors, it’s not just about tasting the food—but experiencing the warmth and tradition behind it.
